Natural pork is what we do.  Fresh pork chops, tenderloins, sausage or loins.  But that is just the tip of the iceberg.  We use the same natural pork to create artisan cured meats in the old World Italian style.  Guanciale, Pancetta, and Coppa, to name a few.  Our artisan products are unique to the Southeast and natural pork is a rare find.  We have it, and it is our mission to provide natural pork products to restaurants, markets, and you.


We started curing meats while living and working in New York City.  Today, in Oxford, Mississippi, we own the critically acclaimed L&M’S Kitchen and Salumeria.  This is where we display our house cured meats and incorporate them into dishes throughout the menu.  As we serve these old world artisan cured meats to our customers, they continuously ask for more.  Pancetta Ranch is our response.  We use naturally raised pigs from right here in Mississippi.  When it comes to cured pork, our methods are authentic.  We also process and sell fresh pork to Mississippi businesses and directly to consumers at Stan’s Country Store on Highway 6 in Batesville, MS.

About Dan Latham


Dan Latham is a passionate man.  His adoration for food and wine competes with his love for fly fishing.  But in Dan’s words, his two kids “rock his world!”  His professional accomplishments include a wildly successful restaurant in Oxford, Mississippi; apprenticeships with New York chef, Mario Batali; and culinary work on numerous programs for The Television Food Network.
